Serves 4
2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
1 ounce Mountain Cider spiced apple cider concentrate
1 cup vegetable or chicken broth
2 tablespoons Dijon mustard
1 pound green beans, washed and trimmed
2 teaspoons fresh thyme leaves
½ teaspoon kosher salt
¼ teaspoon black pepper
1. Saute the onion with the olive oil in a pan over medium-high heat for about 5 minutes, stirring often. Add the garlic and saute for another minute.
2. Whisk the cider concentrate, broth, and mustard together in a bowl. Add this to the pan along with the green beans, thyme, salt, and pepper.
3. Bring to a boil, then reduce the heat to maintain a simmer. Cook for about 10 minutes until the beans are tender and the liquid has reduced. Serve warm.
